There are small references here and there, but nothing major that I've found. An interesting little booklet is "The Egyptian Desert in the Irish Bogs: The Byzantine Character of Early Celtic Monasticism" by Gregory Telepneff. If anyone knows of a major source on the subject, I'd appreciate the lead.
